Description
Ginger peel should be removed with the help of wooden splinters or knives and wash thoroughly with water. With fork picked the rhizomes then sugar can penetrate deep in the tissues. The picked rhizomes cut into 1-2 pieces of thickness and boiled until they become soft. After boiling sufficiently, the ginger pieces should be removed from the water and kept in shade for drying and ginger are kept for 24 hours wit sugar solution .on second day remove ginger pieces from sugar syrup and add 2 g citric acid boil the syrup until sugar strength reaches up to 600 Brix. And do that procedure up to 750 Brix. this dried pieces coated with powder sugar and pack in polyethylene pouches
